Tuscan White
Bean Salad
White beans make a lovely salad, and you may serve
this dish warm, cold or room temperature. Remember to be gentle
when tossing these beans, as vigorous handling can squish them.
My experience has been that the small white beans squish
the least.
2 tablespoons olive
oil
2 teaspoons rice vinegar
1 teaspoon bottled lemon juice
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/8 teaspoon sugar
One 15-ounce can Great Northern, cannellini,
or small white beans, rinsed and drained.
Whisk together the oil, vinegar, lemon, basil,
garlic, and sugar. Empty your rinsed and drained beans into a serving
bowl and drizzle with the olive oil mixture. Toss gently to coat.
Serve as is, heat, or chill.
