Baked Crab Cakes

In this recipe I call for a little homemade spice mix. Don’t worry – it’s made of very common spices and flavorings. Save the rest for other seafood dishes.

Homemade Seafood Spice
Combine:
     1 tablespoon garlic powder
     1 tablespoon onion powder
     1 teaspoon white pepper
     1 teaspoon black pepper
     1 teaspoon paprika
     1 teaspoon chili powder
     1/4-1/2 teaspoon cayenne pepper
     1/4 teaspoon cocoa powder
          (unsweetened)
     1/4 teaspoon sugar

Crab Cakes
1 tablespoon melted butter
Two 6-ounce cans crab, drained, cartilage removed
2 teaspoons bottled lemon juice
1/2 cup bread crumbs, divided (1/4 cup for mix plus
     extra 1/4 cup for dredging)
1 teaspoon Homemade Seafood Spice
1 egg, lightly beaten

Cooking Directions:
Preheat oven to 375°. In a medium sized bowl, mix melted butter, crab, lemon juice, 1/4 cup bread crumbs and Seafood Spice. Lightly beat egg in a separate small bowl, then add to crab mixture. Stir gently until thoroughly combined. With your hands, make 6 roughly silver-dollar-sized patties. Dredge each of them in the extra 1/4cupbread crumbs so that they’re covered. Bake on a lightly greased baking sheet for about 30 minutes. They should be turning golden brown and slightly crispy on the outside.
