Curried Chicken
and Artichoke Salad
The curry in this dish brings out a sweetness
you dont expect. Great as a salad or a sandwich. Consider
serving scoops in canned pear halves.
One 10-ounce can
chicken, drained
One 6-ounce jar marinated artichoke
hearts (drained and chopped)
1/2 cup raisins
1/2 cup mayonnaise
1 tablespoon rice vinegar
1 teaspoon curry powder
1/4 teaspoon garlic powder
Salt and pepper as desired
Mix above ingredients thoroughly and serve as
desired.
