Lemon Garlic
Toast
Adding some lemon to the typical olive oil/garlic
combination gives these toasts an extra dash of flavor. Perfect
as an accompaniment to chicken, fish or pasta dishes.
One 8-ounce baguette
1 tablespoon olive oil (or other vegetable
oil in a pinch)
1/2 teaspoon dried parsley leaves
1/2 teaspoon bottled lemon juice
1/8 teaspoon garlic powder
Set oven on to broil. Cut baguette on the diagonal
into 1/2- to 1-inch slices. Broil about four inches from the heat
source for about 2 minutes, turning once. (A toaster oven is great
for this you can watch them and turn just as they begin to
brown around the edges.)
In a small bowl or dish, combine remaining ingredients
and stir. Drizzle (or brush) oil mixture over toasts and serve.
Makes 8-16 toasts
