Greek Green Beans

This one’s super simple but tastes like you went to a lot of trouble for a side dish. It’s even good without the cheese.

     2 tablespoons olive oil
     1 1/2 teaspoons dried oregano
     1 teaspoon onion powder
     1/2 teaspoon garlic powder
     pinch of salt

One 15-ounce can diced tomatoes, not drained
1/4 teaspoon sugar
Two 15-ounce cans cut green beans, drained
One 2.25-ounce can sliced olives, drained
Feta cheese (optional)

Place olive oil in a medium saucepan. Add oregano, onion powder, garlic powder, and salt, then stir over medium heat just a minute or so, until fragrant. Add tomatoes with their juice, then sprinkle sugar over tomatoes (it helps cut any sharpness), and stir. Add green beans and olives, stir, and gently simmer about five minutes to let flavors ripen.

Serve with crumbled Feta cheese on top if desired.
