Indian Spiced Corn

Corn is a great side dish and stays nice and firm through the canning process. Here’s a way to add some zip to this favorite. (And this recipe is easily doubled.)

2 tablespoons olive oil or other cooking oil
2 teaspoons onion powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon bottled lemon juice
pinch of salt
One 15-ounce can corn, drained

Place olive oil in a medium saucepan. Add onion powder, cumin, garlic powder, coriander, lemon juice, and just a pinch of salt. Stir it over medium heat about a minute, until it becomes fragrant and blended. Add corn and stir to coat. Heat just another minute or until corn is hot.
