Sweet Potato Maple Pie

Rather than ordinary pumpkin pie, consider the sweet potato. It tastes very similar to pumpkin and provides many of the same great anti-oxidants.

     3/4 cup brown sugar
     1 teaspoon ground cinnamon
     1/2 teaspoon salt
     1/4 teaspoon ginger
     1/4 teaspoon nutmeg
     1/4 teaspoon ground cloves

2 slightly beaten eggs
One 29-ounce can yams/sweet potatoes in light syrup,
     drained and pureed
1 1/2 teaspoons maple flavoring
One 12-ounce can evaporated milk
2 regular sized ready-to-bake frozen piecrusts

Preheat oven to 425°F. In a small bowl, whisk together brown sugar, cinnamon, salt, ginger, nutmeg and cloves. In a large-sized mixing bowl, slightly beat eggs. Add pureed sweet potatoes to eggs and blend. Stir in maple flavoring, then stir in brown sugar mixture. Slowly add milk, stirring or beating until smooth. Pour mixture into piecrusts. Bake for 15 minutes at 425°F, then reduce heat to 350°F and bake another 40-50 minutes. Pies are done when a knife inserted into the center comes out clean. You may serve it warm or chilled, like pumpkin pie. To chill, place it in the refrigerator for about 3 hours.

Makes 2 pies, serving 6-8 each.
