New Potatoes with Rosemary Herb Butter

When you don’t have time to clean and boil baby potatoes, this is a life-saver – a cooked potato is pretty much a cooked potato no matter where it hails from. This dish makes a lovely side for lamb, beef, pork or chicken.

     4 tablespoons butter (1/2 stick)
1/2 teaspoon dried, crushed rosemary leaves
     1/4 teaspoon garlic powder
1/8 teaspoon salt (remember the potatoes come with some salt)
Two 15-ounce cans whole potatoes, not drained

Melt 4 tablespoons butter with rosemary. When butter melts, add garlic powder and salt.
Heat potatoes in microwave or in small saucepan. Drain them and then drizzle with melted rosemary herb butter. Toss gently to coat. Spoon remaining herb butter over potatoes at serving time.
