No-Cook Peach
Soup
A perfect beginning for a summer evening or special
brunch, this simple recipe adds a touch of elegance without effort.
Peaches are so soft that you may use a regular blender or hand blender.
This recipe easily doubles--great for large gatherings.
Two 15-ounce cans
sliced peaches in heavy syrup, not drained
1/4 cup bottled lemon juice
1/2 cup sweet white wine, such as
Gewurztrameiner or White Zinfandel
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
Puree peaches, syrup and all, until they resemble
a thin applesauce. Add remaining ingredients, making sure to stir
or process thoroughly. Chill for one hour or more before serving.
You may want to garnish with a pinch of mint leaves or ground cloves
in the middle of each bowl of soup.
