Quick Shrimp Quiche

Shrimp quiche is such a nice brunch dish because it’s elegant yet easy. As brunch, it’s nice with breakfast potatoes. As dinner, try it with Asparagus in Lemon Oil or Creamy Green Beans and Potatoes.

     3 eggs
     1/3 cup evaporated milk or milk
     2 teaspoons onion powder
     1/2 teaspoon Worcestershire sauce
     1/4 teaspoon bottled lemon juice

pinch of ground nutmeg
One 4.25-ounce can tiny shrimp, drained
1 cup shredded Swiss cheese
One regular size frozen pie crust

Preheat oven to 425°F. In a medium-sized mixing bowl, whisk together ingredients from eggs to nutmeg. Gently stir in shrimp and cheese. Pour into frozen pie crust. Bake for 35 minutes (or until knife inserted into middle comes out clean).
