Cherry Walnut Bread

Fruit breads are very easy to whip up and make great snacks or school lunch additions. This one also makes for nice quiet time with a steaming cup of Earl Grey tea. Think about serving it during the holidays.

     2 cups flour
     1 teaspoon ground cinnamon
     1/2 teaspoon ground nutmeg
     1/2 teaspoon baking soda
     1/2 teaspoon salt
     2 teaspoons baking powder

1 cup sugar
1/4 cup cooking oil
1 egg
1 teaspoon vanilla
One 15-ounce can tart pitted cherries, drained
1/2 cup chopped walnuts

Preheat oven to 350°F. Lightly a 9x5-inch loaf pan with oil or nonstick cooking spray. In a medium-sized mixing bowl, combine flour, cinnamon, nutmeg, baking soda, salt, and baking powder using a fork to stir and distribute. In another bowl, combine sugar, oil, egg, and vanilla, beating until smooth. Add cherries and continue to beat for another minute or so. You should beat until you have smaller pieces of cherry, but not until smooth. Add the flour mixture, beating or stirring until completely moistened. Stir in walnuts if desired.

Pour into baking pan and bake for 50-55 minutes, or until a kninfe inserted into the center of the bread comes out clean. Let stand for 10 minutes to cool. Next, for easier slicing, wrap the loaf in plastic wrap.

Makes one loaf (18 half-inch slices)
